I did this using a program called comfoolery to redirect the com port to a tcp/ip port and used a telnet/ssh client called putty to connect to the tcp/ip port after setting it to log to a file. This recorded all the NMEA data and I used excel to format the lat/long correctly etc then imported the data into mappoint.
I was also able to using a program called GPSSIM and a null modem cable play this NMEA data back as a simulated GPS device in any navigation program to watch the data back 'as it happened'.
I cannot remember the URLS of the software above but it is all freeware and can be found reasonably easily with google.
