Judge -- when you link the data, you will get to a place in the Wizards where you can set this, exactly what you're looking for...

When you get to Map Type, I assume you go to Pushpin. Then you can "Select which fields to display in the balloon for this set".

Finally make sure "Display selected field names in balloons" is checked.
