I want to set up a fishing log where I can track my fishing trips on the lake.

Are the maps detailed enough? How far down do they go?
How hard and complicated is it to upload my own map?
I've got some ponds on my ranch wich I'd like to enter information in as well.

Also, How do you tell MapPoint what fields to capture data for? Is there a link to Excel or Access?

I have mappoint and the maps are quite inadiquite for what you want to do. I too would love to do just what you're trying to do. Most maps don't include rivers or small roads outside the city, never mind logging roads.

Unfortunately, you can't add/update the map layers in MapPoint.
