I want to remove rivers, certain roads, bold my town names, etc. I cannont find this functionality in any map software of any kind. It seems so basic to me but it appears that it isn't possible. Am I missing something?

No, unfortunately you don't have that level of control.

All that's available is the 5 or 6 Map styles and the Font size settings.

Hopefully they will let you have more control in future versions... did you see the MapPoint User Survey? You can give feedback for future versions.

Being able to remove labels by category is a frequent request. It probably isn't too complex to implement, so if enough people put it in the questionnaire, then there's a good chance it will be added.
