How do I import multiple datasets at one time, each with their own pushpin symbol? I often import 20-30 data sets, and it is tedious doing them one import at a time, i would like to do one single import and then later assign them each a unique symbol.

Check out the code in http://www.mp2kmag.com/articles.asp?ArticleID=46. This shows the process to pull data into MapPoint and then assign symbols based on something in the data. This could easily be modified to allow for automating as much or as little of the process as you'd like.
