How many are there? Would your project be good candidate for automation or are there few enough it would be feasible to do manually? It's just a few steps to do each one.

Multiple points 1500 plus....
Each point - can the zip be pulled back serperately even if the radius overlap?
What are the steps if we are looking at one at a time?

Yes, it's probably worthwhile to automateDo you want the output all in a single table or how should it be formatted?
Not sure what you mean, do you want each zip code to be associated with no more than one of your points? This would be do-able and could be done by looking at either the straight-line distance or the driving distance between your point and the center of each zip code.

The trick is to first map any demographic variable by zip code, then you could draw your radius and then right-click on the edge and select "Export to Excel". What you would end up with is 1500 separate worksheets however, it's probably best to explore a custom macro that will generate the results you need in an easier-to-use format.

Depending on your budget and need for accuracy, I'd also mention you can buy updated zip code databases with lat/lon's for fairly cheap that might be more up-to-date than MapPoint and use this as your source for the zip data.

Interested if the requested project was ever done. We have several thousand points of presence, for each we have drive time calculations. We would like to be able to determine the population coverage we have. Currently utilizing Map Point 2013, with 2007 census data. Looking for a rough overall number that can be recalculated as we add (or subtract) locations in the future. Close counts, as this is a government related project.
This project was not done, but I've lately been working with Census 2010 demographic data and have done similar projects, so it's certainly doable if you are interested!
