I work with Habitat for Humanity ReStore, a non profit retail operation that supports the projects of Habitat for Humanity. I just purchased Mappoint 2010 to test the capabilities for our location, and the potential implementation of Mappoint for the ReStores around the country. It is our hope that we can use this application in conjunction with Access to create simple way to create actionable data for our operations and help other ReStores be more efficient. The ReStore picks up donations from donors to be sold to the public in the ReStore. I would like to do two things. Gather actionable data to direct decisions, but also use mappoint to set of daily pickups and organize daily routes.
So...
Here is my first question and concern. I am not coming up with a lot of addresses I feel it should have in the data base. It won't even find our store location by address on a busy road. I am in Columbia Sc, in a well established part of town and the inability to find some addresses worries me. Suggestions?

MapPoint (or any geocoder) can be picky about address formatting.
For example a local Interstate could be formatted as:

I-635
Interstate 635
LBJ Highway
Lyndon B Johnson Highway
LBJ
etc

Sometimes you just have to hit the right format.
Also, the database is always going to be slightly out of date. So if you're at an address that is a couple of years old, it probably isn't in the MapPoint 2010 database. It might be in MapPoint 2011 though.

Generally you're never going to get a 100% hit rate when geocoding a list of addresses. Therefore if you are going to be re-doing the import in the future, I would recommend you store the coordinates. Barring typing mistakes, coordinates are always as accurate you type them!
