Can you isolate a country or even just a state. I would like to just see a state then let the rest of the state disappear? Can I take the roads and highways off my maps they look out of place?

You can't "isolate" a state or country. But you can remove the roads and highways. Click on Format in the menu bar, then choose Map Style and then Data Map.
