I understand that I can't add/edit/delete roads from MapPoint but is it possible to retrive the road data (nodes and edges) to insert it in a access database?

The quick answer is NO. You can extract some information from routes, but unless you could find a way to create routes that touched every single road in the base map, you would not get a comprehensive picture.
