I've come across a 3rd party add on for $75 to display 1 state rather than the whole US map, but is there anything out there that is free or authored by microsoft. I actually wouldn't mind paying if I trusted the source.
I need to be able to pull out just one state's worth of data, not the whole US map...

You probably found it on my site - I think you can trust me :-)
It was created by Eric Frost who operates the mapforums.com website (ie. this one). You can buy it here as well.
Both Eric and myself have a demo for Nevada that you can try.

Not bad at all. Anyway to make the county lines stand out more? They don't really show up until you get zoomed way in.

There's nothing you can do about that. The ability to modify display attributes are a bit limited in MapPoint. Changing labels on/off is another one that is often requested.
