I would to know if is possibile to Update the data into database with this method.
If I link a table (with UDL), Move a pushpin into new location and then Fire the UpdateLink method, the Column Latitude/longitude will be changed?

Nope. UpdateLink updates MapPoint from the database, not the other way around. You'll have to write code to do that yourself.
